Summer brings out the best in all things: new fashions, darker tans, and of course, innovative flavors infused into the typical dishes we eat during every other season. Bird Rock in La Jolla has seen many of its own changes over time, and even the most successful of restaurants in the area have learned to adapt to the ebb and flow.
Beaumont’s, self-professed as a neighborhood eatery, provides its loyal customers with a menu that changes and grows just as the ocean wind blows. Patrons of Beaumont’s will notice Chef Scott Cathcart’s signature style that implements seasonal ingredients while creating fascinating combinations. The new summer menu promises a fresh and eclectic array of sophisticated dishes with Southern Californian flare and flavors still lingering with sea breeze.
The new menu options reflect culinary diversity, influencing the finished products of salads, appetizers, main courses, and cocktails. For an invigorating kick-off to any evening dinner, the Summer Peach & Arugula Salad ties in the very best of summer fruits to a traditionally leafy green dish. The salad comes with its share of radishes, prosciutto, goat cheese, and grilled red onions all under a housemade balsamic vinaigrette. Everyone’s favorite fruit of the season is making its grand appearance in a Watermelon & Organic Watercress Salad. Golden beats, toasted pepitas, arugula, basil, and champagne vinaigrette make for one killer salad.
Ease into the rest of your meal with fresh tastes from the sea, brought to your plate as Grilled Octopus Tostadas with cilantro-lime aioli and jicama-radish salad. The summer menu offers a variety of entrees to get you loosening up that belt buckle a few notches. Love juicy ribs? Now you can enjoy them summer-fresh and light. BBQ Brandt Short Ribs are served “Hawaiian style” with celery root slaw, sweet potato fries, grilled pineapple, and a soy-tangerine glaze.
My personal favorite bite for summer time is the Organic Garden Risotto. Blended lightly with English peas, baby carrots, basil, watercress, parmesan and goat cheese, each distinct flavor combines into a light and effortless taste of healthy Heaven.
Mixologist and my new friend Gavin Mcmanes tops a dinner meal over into the lines of utter ecstacy with his summer cocktails. Take a sip of the Summer Solstice cocktail with fresh berries, mint lemon juice and Ketel One Citron over ice with a “Party on the Rim” (pop rocks!). If that doesn’t go down easy for you, how about a big gulp of the Tropical White Banana Strawberry Sangria?
