Bistro 39 announces an autumn edition of the popular Winemaker’s Dinner Series, featuring Ramona wines and local, organic flavors in a five-course menu crafted by Chef Larry DiFolco.

Many locals assume Temecula is the only home to San Diego wineries, but Ramona Valley is a hidden treasure of up-and-coming wineries. The Salerno Winery is a family owned boutique winery in Ramona, and one of the newest in the area with the first vintage only dating back to 2002.
Only locally grown (and caught) fish, poultry, and meats, along with farm fresh vegetables picked the day of the dinner from Chino Farms will be featured at the winemaker’s dinner. Course one pairs a Chardonnay- Sauvignon Blanc, “Bianco Tosto 2007,” with a grilled swordfish taco station.
Course two joins the internationally awarded, “Barbera 2006 Paso Robles,” with barbecue, free range chicken. The tangy chicken, with its deep red color and caramel texture will match the noble tannins and notes of mature red fruits found in the Barbera.
Course three will combine another internationally awarded, “Pinot Noir 2006,” with organic quail, stuffed with chestnuts and mushrooms, in a reduction of the featured wine.
Course four brings Petite Sirah 2005 Paso Robles, a double gold medal winner, and braised beef short ribs. The ribs are slow cooked in the Sirah until fork tender.
Finalizing the menu is Temptation (literally and figuratively). Temptation is a full bodied, port-style wine with a balance of fruit and raisin flavors. It will accompany a silky pear and almond tart.
