The beloved tradition, which began in 1994, is uncovering its most novel game menu to date this fall, due to Executive Chef Damaso Lee's recent excursion to Europe. The trip, funded by owner Michael McGeath, was a one month tour of Italy that hit the major gastronomic hotspots of Florence, Tuscany, Bologna, Modena, Verona, and more - even stopping by the La Pergola restaurant at the Hilton Hotel in Rome where he worked with Executive Chef Heinz Beck, a culinary colossus considered to be the foremost chef in all of Italy. Armed with fresh inspiration and a host of mysterious techniques, Lee has returned to Trattoria Acqua in San Diego to showcase a hybrid of flavors.
Says McGeath, "Game and truffles have stunning flavors that just burst in the fall and are signature flavors of the Mediterranean. I'm looking forward to Damaso's latest touches on our favorite and new recipes."
The exciting culinary event will boast an impressive array of fall game, including such exotic poultry as pheasant, ostrich, wild boar, partridge, and squab, as well as the uncommon land choices of buffalo, rabbit, and venison. White and black truffles will also be imported directly from Europe to complement the game and the restaurant's extensive wine list.
